Easy Meatloaf Recipe #1 Beverly Style (6 – 8 servings)
For 50 years all of us have tried to get this recipe from the woman who never uses recipes. After years of observation here it is.
- 3 lbs. of Eagle Wood Ground Beef
- 1 ½ cups of bread crumbs
- 1 tablespoon of catsup
- 1 teaspoon of mustard
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of poultry seasoning
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 1/2 teaspoon of celery salt
- Mix all the above with milk until the mixture feels like a hamburg pattie.
- Bake loaf in the middle of a glass baking dish 13 X 9 X 2. Add ½ inch of water. If water evaporates before 1 ½ hours add more.
- Bake at 350ºF for 1 ½ hours.
Easy Meatloaf #2 Salsa Inglesia Style (4 – 6 servings) - 1 ½ lbs. of Eagle Wood Ground Beef
- 1/2 lb of Eagle Wood Ground Pork
- 1/4 cup of your favorite chili sauce
- 1/2 teaspoon of poultry seasoning
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 1 tablespoon of Worcestershire (Salsa Inglesia)
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped onions
- 3 cups of bread crumbs
- 3/4 cup of milk
- 2 eggs
- Soak bread in milk, add eggs, onion, celery, Worcestershire sauce, salt, pepper, poultry seasoning, and mix thoroughly.
- Add meat, pork and place loaf in glass baking bowl 13 X 9 X 2.
- Bake at 350ºF for 1 ½ hours.
- Spread chili on top 15 minutes before removing
Easy Meatloaf #3 Bachelor Style (4-6 servings) - 1 ½ lbs. of Eagle Wood Ground Beef
- 1/2 lb of Eagle Wood Ground Pork
- 2 small packages of dry soup mix
- 2 cans of onion soup
- Mix meat, dry soup mix and one can of soup thoroughly.
- Add loaf mixture in glass baking bowl 13 X 9 X 2.
- Pour 1 can of soup around loaf.
- Bake at 350ºF for 1 ½ hours.
Easy Meatloaf Recipe #4 Razor Back Style (8 – 10 servings) - 2 lbs. of Eagle Wood Ground Beef
- 2 lbs. of Eagle Wood Ground Pork
- 1 cup whole grain bread crumbs
- 1 cup milk
- 1 tablespoon salt
- 1 small onion
- 1/4 tablespoon pepper
- 3 eggs slightly beaten
- 6 1 inch by 1/2 inch by 6 inch chunks of pork leaf lard
- Mix meat, pork and ingredients in glass baking bowl 13 X 9 X 2.
- Place mixture on leaf lard strips.
- Bake at 400ºF for 1 ½ hours basting every 15 minutes.
- Start with 1/2 cup of water, then use juice in bowl.
- Serve with diced onion.
Easy Meatloaf Recipe #5 Potpourri Style (6 – 8 servings) - 3 lbs. of Eagle Wood Ground Beef
- /1/2 lb of Eagle Wood naturally smoked bacon
- 1/4 lb of Eagle Wood Leaf Lard
- 2 medium onions
- 2 large tomatoes
- 1 lb of green string beans
- 6 stalks of celery with leaves
- 1/2 lb of fresh mushrooms
- 2 large natural eggs
- 4 tablespoons of butter
- 2 medium carrots
- Fresh parsley 2 tablespoons
- 1 tablespoon chives
- Thyme leave, pinch
- Sea salt, pinch
- Pepper, pinch
- Dry mustard, ½ teaspoon
- 1/3 cup soy sauce naturally fermented
- 2 cloves garlic
- 1/2 cup of whole wheat flour
- 1/2 cup milk
- Render down leaf lard in frying pan.
- Dice onion and pan fry until clarified then add crushed tomatoes.
- Add finely chopped string beans, celery with leaves and mushrooms.
- Add 1/8 lb. of butter and continue to sauté.
- Grate two carrots and place into pan.
- Mince two tablespoons each of parsley and chives with a crushed clove of garlic.
- Place all ingredients and beef in a bowl and thoroughly mix by hand.
- Add salt and pepper to taste, add ½ cup of soy sauce.
- Add ½ teaspoon of dry mustard, ½ cup of milk and two eggs.
- Mix all ingredients by hand thoroughly.
- Place the loaf in a glass baking dish and add ¼ inch of water,
- Bake at 350ºF for 2 ½ hours, basting every 30 minutes.
- At timed end, drain off juice into separate gravy bowl.
- Place loaf under broiler until crispy.
